Salted Honey Pie

INGREDIENTS
  • Pie Crust
  • 4 Egg Yolks
  • 2 1/2 Cups Heavy Whipping Cream
  • 3/4 Cup Packed Brown Sugar
  • 1/3 cup cornstarch or Arrowroot Powder
  • 1/2 tsp Salt
  • 1/2 Cup Honey
  • 2 tsp Vanilla Extract
  • Sea Salt (For Garnish)
DIRECTIONS
  1. Preheat the oven to 375*. Place the pie crust in the pan, & place in the fridge to cool.
  2. Gently beat the egg yolks & set aside.
  3. In a saucepan, combine whipping cream, brown sugar, cornstarch, & salt. Cook on medium heat until it comes to a rolling boil, stir regularly. After it has come to a rolling boil, remove from heat.
  4. Temper the eggs, by adding a bit of the filling mixture into the eggs as you stir. Continue adding more of the mixture while stirring until it is all combined & smooth.
  5. Add the honey & vanilla extract to the custard & stir until combined.
  6. Pour the custard into the chilled pie crust.
  7. Bake the pie for 40-45 min. It will bubble up and start to brown. The middle of the pie will still be jiggly.
  8. Remove from the oven, cool to room temperature. As it cools it will firm up.
  9. Refrigerate the pie until it is firm & cold.
  10. Sprinkle with sea salt & serve.
