Salted Honey Pie

INGREDIENTS
- Pie Crust
- 4 Egg Yolks
- 2 1/2 Cups Heavy Whipping Cream
- 3/4 Cup Packed Brown Sugar
- 1/3 cup cornstarch or Arrowroot Powder
- 1/2 tsp Salt
- 1/2 Cup Honey
- 2 tsp Vanilla Extract
- Sea Salt (For Garnish)
DIRECTIONS
Preheat the oven to 375*. Place the pie crust in the pan, & place in the fridge to cool.
- Gently beat the egg yolks & set aside.
- In a saucepan, combine whipping cream, brown sugar, cornstarch, & salt. Cook on medium heat until it comes to a rolling boil, stir regularly. After it has come to a rolling boil, remove from heat.
- Temper the eggs, by adding a bit of the filling mixture into the eggs as you stir. Continue adding more of the mixture while stirring until it is all combined & smooth.
- Add the honey & vanilla extract to the custard & stir until combined.
- Pour the custard into the chilled pie crust.
- Bake the pie for 40-45 min. It will bubble up and start to brown. The middle of the pie will still be jiggly.
- Remove from the oven, cool to room temperature. As it cools it will firm up.
- Refrigerate the pie until it is firm & cold.
- Sprinkle with sea salt & serve.
