Crazy Gouda Bread

INGREDIENTS:
- 1 tablespoon dry yeast
- 1 ½ cups very warm water
- 1 tablespoon of sugar
- 1 tablespoon of olive oil
- 1 teaspoon of rosemary
- ½ teaspoon of sage
- ½ teaspoon of thyme
- 4 cups of flour
- 2 teaspoons of salt (put aside for the flour)
- Gouda cheese, grated
- Honey of your choice
DIRECTIONS:
- In a bowl, dissolve yeast in water.
- With a mortar and pestle, crush rosemary, sage, and thyme together.
- To bowl of dissolved yeast, add sugar, oil, and crushed spices. Do not add salt yet!
- Add flour, then add salt. Stir together. If needed, add more warm water to make a wet dough.
- Stir until smooth. Do not knead!
- Cover and let rise until doubled in size – about 1 hour.
- When risen, turn onto a floured surface. Shape into a French-style loaf and place on a greased baking sheet.
- Cover top of dough with grated cheese and honey. Let rise until doubled in size – about 30 minutes.
- Heat oven to 400°F. Bake for 20 minutes.
- Let cool, then go CRAZY!
